Low sodium cooking including family favourites. I have tried to include interesting little bits of the history of recipes or whose favourite it is. The book contains recipes from basic daily meals to a few gourmet ones.

EXCERPT

 

This is the most requested menu item by my grandchildren when coming over. We gather and freeze strawberries when in season so they can have it all year round.

 

Serves 8

 

2 cups strawberries

 

1 cup apple juice

 

2/3 cup sugar

 

1 cup water – divided

 

1/2 tsp cinnamon

 

1/8 tsp cloves

 

16 oz strawberry yogurt

 

In a saucepan, combine apple juice, 3/4 cup water and spices. Bring to a boil. Cool. In a blender, puree strawberries and 1/4 cup water. Stir cooled apple juice mixture, strawberry mixture and yogurt until well blended. Chill and serve.

 


A Word From the Author


I really never thought about being an author until I had to go on a special diet and saw how little there was out there to help people who have to be on low sodium diets.  For this reason “Low Sodium Cooking from the Heart” was born.

It was a lot of work publishing…researching and communicating with other people.  Some of the people I consulted with were a neurologist, one of the leading liver and blood specialists in our country and the nutritionists and nutrition researchers at the Canadian Liver Foundation.  The plus side of that was meeting so many wonderful people from across the country if only through email.  Reworking recipes to make them low sodium was fun and my neighbours were well fed.  Photo shoots were interesting.  Do you know how difficult it is to photograph food?  When it is hot it steams up the camera lens and when cold congeals.  It was exciting working on the cover and pages of information provided at the beginning of the cookbook.

“Taste of Home” cookbooks are some of my favourite cookbooks other than my own.  They do a wonderful job.  

The best part of being an author is the sense of accomplishment at having published and finished a book.  It was also a wonderful feeling to give all of my family copies so they would have their favourite recipes forever.  The worst is marketing because I am not particularly good at that.

My youngest grandson wanted to know why some of his favourites are not in the book. I told him they were not low sodium and he said I should write another one so he could have all of those. Now I am working on another cookbook at his request.
